The presentation recounts the history of oyster farming in the region: "From the classrooms of the little school in Castries to the presidency of the Academy of Sciences, Jacques Marie Cyprien Victor Coste (1807–1873) led an eclectic life that spanned the 19th century.  His career was a succession of opportunities born of his open, curious, and practical mind, embodying a journey marked by discretion and modesty, crowned with success. His life, devoted to science and innovation, is summed up in the epitaph engraved on his commemorative plaque: "His life was one long working day devoted to science and useful discoveries."
