Sciences for Oenology (SPO)

The mission of the Sciences for Oenology unit is to conduct fundamental research in plant biology, microbiology, biochemistry, chemistry, and physical chemistry, with a primary focus on the viticulture and winemaking sector. Researchers in the unit focus primarily on topics related to:
- The integrative physiology of wine-making yeasts and the control of alcoholic fermentation;
- Phenolic compounds (biosynthesis, reactivity, physicochemical interactions, properties, utilization).
