Sciences for Oenology (SPO)

The mission of the Sciences for Oenology unit is to develop generic research in plant biology, microbiology, biochemistry, chemistry, and physical chemistry, with the wine industry as its main field of application. The unit's researchers focus primarily on topics related to:
- The integrative physiology of wine-making yeasts and the control of alcoholic fermentation;
- Phenolic compounds (biosynthesis, reactivity, physicochemical interactions, properties, utilization).
