Integrated approach to quality food production (QUALISUD)

The QualiSud unit develops scientific activities aimed at analyzing, understanding and optimizing the process of building food quality throughout the processing chain. Particular attention is paid to sensory quality, health effects and sanitary risks.

UMR QualiSud's research activities are structured around five scientific actions:

  • bioguiding processes through the sensory and health qualities of food ;
  • post-harvest quality control of fresh fruit and vegetables ;
  • mycotoxin prevention and control strategies throughout the food chain ;
  • study of transfers and reaction kinetics during fermentation of solid foods ;
  • multi-criteria analysis and design for decision support in the food industry.
