Sciences for Oenology (SPO)

The vocation of the Sciences pour l'Œnologie unit is to develop generic research in plant biology, microbiology, biochemistry, chemistry and physical chemistry, with the wine industry as its main field of application. The unit's researchers focus mainly on themes relating to :

  • Integrative physiology of oenological yeasts and control of alcoholic fermentation;
  • Phenolic compounds (biosynthesis, reactivity, physicochemical interactions, properties, valorization).
